UBE CREAM CHEESE WONTONS

This recipe is inspired by a dish I had when I traveled to Houston this summer. While exploring the city, I dined at this restaurant called Trendy Vegan where I had Purple Puff, a crunchy wonton with a purple filling that tasted just like cream cheese. I’ve had a few vegan versions of a cream cheese wonton before, but this was the best yet. This is my recreation of that dish. Hope you enjoy!


What is UBE?

Ube is a purple yam or root vegetable that is native to the Philippines. It is often mixed up with another root vegetable called Taro so much so that the store I bought mine from mislabeled them. I originally wanted Taro for its purple color, but it turns out Ube is even richer in color. Ube is used in many Filipino desserts that typically have a bright purple hue to them. The purple color is indicative of Ube being rich in antioxidants, which is great for health promotion. If you’re looking for this vegetable, you can probably find it at your local Asian market.

UBE CREAM CHEESE WONTONS

Prep Time: 30 minutes

Cook Time: 15 minutes

Ingredients

  • 2 medium sized Ube, boiled and mashed

  • 1/4 cup vegan cream cheese

  • 3 tablespoons agave

  • 3 tablespoons chopped green onions

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon salt

  • wonton wrappers

  • oil for frying

Instructions

  1. Blend mashed ube with vegan cream cheese until a smooth consistency is reached. Water can be added in small increments to reach preferred smoothness.

  2. Add ube cream cheese mixture to bowl and combine with agave, green onion, and seasonings.

  3. Place dollops of ube mixture into wonton wrappers and fold into preferred shape. Edges can be sealed by moistening sides with water and pinching the edges together tightly.

  4. Fry the wontons in oil on medium heat setting or spray the wontons with oil and place in air fryer.

  5. Remove wontons when slightly golden brown and serve with sweet and sour sauce or sauce of your choice.

Notes

  • Adjust seasonings to your liking. Measurements are not exact.

  • Replace savory seasonings with cinnamon, ginger, and add some extra agave for a dessert variation

  • Use sweet potato or taro if you are unable to find ube in stores.
