Allow Me to INTRODUCE MYSELF…MY Name is CJ!

Hello! My name is Chelsei James, or CJ for short. I am a 25 year old nutritionist with a B.S. in Human Nutrition from Winthrop University. I am also a currently pursuing my Masters in Nutrition. I was born in South Carolina and raised by two West Indian parents, which heavily influenced my love for real homemade cooking. At an early age, I thought I wanted to be some sort of scientist, but it wasn’t until I read an article on growing careers that I heard for the first time what I wanted to be - a registered dietitian. What better way to combine my love of food with my interest in science? Through schooling, I have learned the evidence-based effects of our diets on our health, and through this blog, I will share what I have learned with all of you.

The idea of Eating With CJ first came into fruition about 4 years ago in May 2018 when I started my fully vegan lifestyle. I decided to document my journey on an Instagram account, mostly for friends and family. I had no idea that within those two years, I would not only grow into a fully committed vegan, but also inspire so many friends and strangers to take interest in the lifestyle as well. With this blog, I aim to equip everyone reading this with the tools and confidence needed to start their own journey towards health and wellness. I believe the best place to start your journey towards a healthier diet is to eat more fruits and vegetables. Fruit and vegetable intake is low across the United States even though fruit and vegetables are supposed to be about 50% of daily diet with 5 servings a day. As you explore my blog, I hope to inspire you to have a colorful plate everyday.
